October is the best period for buy truffles.
Along the main streets of Alba there are different shops. I and Maurizio recommend Polleria Ratti Elio, a small family-run shop, for three reasons:
1. Truffles have precise indication of the origin
2. Prices are clearly displayed
3. There is also a wide range of local cheeses! Here you can find Castelmangno d’Alpeggio, a Slow Food Presidia great with the honey, Gorgonzola Naturale (blued cow’s milk cheese), and much more 🙂
At Polleria we bought the Tajarin (Elio Ratti is also artisan pasta maker), one white truffle, one black truffle and Castelmagno di Alpeggio. So just arrived home we parked us in the kitchen.
Do Tajarin with truffle is really simple. Warms the butter in the pan and boil the pasta. When the pasta is cooked, drain it! Add the melted butter and the grated truffle!
Delicious!! Perfect with Barbaresco or Dolcetto 😉
